麗珠什錦面 is one of the Must Try places in Taipei for street food lovers - it is noodle soup with chicken and pork broth choked full of seafood, pork, black fungus and vegetables which locals love. This is really a Taiwanese comfort dish which many locals eat with families at home, brought out to serve the public.

麗珠什錦面 is an over 50 year old shop. The noodle soup recipe came from shop owner Mdm 麗珠's mum - 麗珠 has been cooking seafood & pork noodles with her mum since she was 7 years old. 麗珠 has kept faithfully to her mum's recipe.

In each bowl of seafood noodles, there is thick savoury sweet stock. Mdm 麗珠 made the stock by boiling old hens, pork leg, pork bones, goose(!) and vegetables for 12 hours.



In the soup, there is a mound of yellow noodles. They are done till soft but still have some chew to the bite. Mdm 麗珠 uses higher quality yellow noodles that can withstand longer cooking.

Over the mound of noodles, there is a heap of fresh clams, prawns, oysters, squid, pork liver, squid balls, lean pork, black fungus, vegetables etc.

For the last nearly 30 years, Mdm 麗珠 goes to the market every day to get her fresh seafood and pork ingredients. The stall holders said she always goes for the best and is not stingy about the price.

Mdm 丽珠 also serves a "dry" version of her seafood and pork noodles which she fries with lard which she makes every day by frying pork fat.

麗珠什錦面 is also famous for their fried pork chop side dish which goes well with the seafood & pork noodles.

Regulars keep coming back for 麗珠's seafood and pork noodles because they want to taste mum's cooking.
