永樂米苔目 is a three generations old rat tail noodle (mee tai mak) shop in Taipei. The founder sold rat tail noodles on a tricycle in Taipei's 永樂 district, hence the stall is called 永樂米苔目 to this day. Rat tail noodles are made of rice flour and are like thick rice vermicelli.

Customers like 永樂米苔目's rat tail noodles because they are slurpy smooth, tender and lightly springy (not mushy). The bowl of noodles and soup is served topped with chopped scallion and chives.



Besides the rat tail noodles, 永樂米苔目's side dishes are also very popular. Best sellers are lightly blanched fresh pork cheeks, belly, snout, skin, intestines, tofu etc. The blanched meat cooked to just the right doneness are dunked in cold water to lock in it's natural texture and flavour.

The water used to boil the pork meat and parts is turned into soup to serve with the rat tail noodles. The soup is light bodied but is loaded with natural sweetness and not greasy. 永樂米苔目's soup is lighter than at other rat tail noodle stalls as it is not made with stock bones.



Third generation boss 林普賢 is the official taster for 永樂米苔目, he is the first to eat the noodles every day to make sure that the flavours are correctly tuned.

The little humble shop has bare bones furnishing but fans appreciate that 永樂米苔目's flavours are just like it was half a century ago.
