肆源小炒 Humble Little Food Stall in Masai with Lots to Offer

After running an errand in Masai, Johor this morning, we swung over to Mr. Tay's little stall 肆源小炒 for brunch. It's just simple staples with rice but the dishes were nicely done as usual. It's another humble but satisfying meal at 肆源小炒.

The Tay family runs 肆源小炒. This is the third time I am writing about 肆源小炒. Now, their elder son Ah Wei has joined the family stall as a cook under his dad's tutelage. The senior Mr. Tay has over 30 years of experience and is a very skillful chef as his dishes proved.

Mr. Tay cooks a variety of familiar chicken, fish, pork and vegetable dishes. He also has roast chicken, roast pork belly, bak kut teh etc. He fries excellent wat tan hor fun 滑蛋河粉 with nice wok hei kick etc.

Mr Tay's food are kept warm in large clay pots - there's curries, braised and stewed dishes.

It's a simple stall. Bare cement floor, stackable plastic chairs, foldable Formica tables, zinc roof, fraying flapping canvas sheets keep out the scorching heat. Nice folks with families, I like it here.

Lots of deep fried and stir fried dishes too to choose from, to go with rice.

Curry pork ribs. Mr. Tay is a genius of flavours - always well balanced and interesting blends. The curry was mildly savoury, spicy, aromatic so that we can taste the natural sweetness in the tender juicy pork.

Mildly savoury sweet stewed fried pork rind 烩猪皮. Interesting soft spongy texture saturated with savoury sweet stewing stock.

Charcoal roasted pork belly.

Nice crackly crisp on the golden brown skin. Mild savoury flavours in the tender meat and savoury-sweet juicy fat.

Charcoal roasted (not deep fried) chicken. Savoury sweet juices in the tender meat and skin. I can also taste natural chicky flavours in the meat.

酸菜 Cabbage stewed with pork belly, asam gelugur and dried chili. Nice mild savoury sourness with underlying porky sweetness from the pork belly.

We have the option of plain white rice or butter rice to go with the dishes. We chose butter rice - the butter imparts a mild savouriness to the tender, slightly greasy, nutty rice. Next time, I will stick to plain white rice or porridge (if available).

4-Star (out of 5). 肆源小炒 in Masai serves delicious "economic rice" style lunch that I won't get tired of.
