Delicious Ramen in Johor JB at ShenYeKitchen 深夜食堂 Food Truck

I was so excited to try this ramen after posts about Shen Ye Kitchen 深夜食堂 food truck keep popping up on my Facebook while I was still in Canada 😂 I love ramen and am also fascinated with food trucks, so the idea of a ramen truck is irresistible to me 😄

Once back in JB, I couldn't wait to drop by Shen Ye Kitchen 深夜食堂 food truck to try their ramen. It is very easy to locate the food truck - it is parked outside The Toast outlet at Jalan Bentara 20 at Taman Skudai Baru. The cute looking blue colour food truck is here from 9:30pm till the food is sold out (usually around midnight).

The menu is simple. Just tonkotsu (pork) ramen - spicy and non spicy.

Then, there are Japanese grill dishes.

Shen Ye Kitchen 深夜食堂 is Mok's brainchild. Mok had worked in Japanese restaurants in Malaysia and Singapore before launching his food truck with his youthful team of 5, just six months ago.

I opted for the spicy version of ramen. Price is RM13 (but I forgot how many sens.... ).

The medium bodied tonkotsu broth made with pork bones has layers of mild savoury sweet flavour. The basic layer is from the pork bones with additional layers from run-off juices from making the chashu. So, we can taste traces of the seasoning used to marinate the chashu.

The only difference between the spicy and non spicy versions is this large dollop of chili paste.

Once I stirred the chili paste into the tonkotsu broth, it changes the taste profile entirely.

I love the spicy broth 😋

The chili is a balanced blend of sweet, savoury and spicy hot. The flavours come from minced pork, dried shrimps and dried chili peppers. There are tiny bits of cartilage in the pork, so there is an interesting mouth feel whenever we encountered the little bits of cartilage.

The flavours of the chili paste is quite robust and it overwhelms the underlying tonkotsu broth. It is alright, as the chili paste is so flavourful 😄

(I felt no MSG thirst after drinking all the broth 👍)

The generic noodles were done slightly softer than al dente. But, as the soft noodles were thick gauge, they picked up lots of spicy broth, so the ramen was slurpy delicious.

I enjoyed it.

The chashu was made with lean meat and felt quite stiff to the bite. Not much porky flavour, just slight taste of seasoning. (I prefer chashu to be in one tender juicy piece like a large coin, a mix of meat and fat, and has natural porky sweetness.)

The ramen comes with a whole shoyu tamago egg which is very generous (most ramen places I've been to only serve half an egg or it is sold separately). The egg was nicely bouncy soft but the yolk was a bit too watery and the flavour was very slight.

👉 I enjoyed the spicy ramen at Shen Ye Kitchen 深夜食堂. It's a very nice experience to have supper from a food truck. I would love to be back for the spicy ramen again and also try all their grilled dishes. Great place for supper 😄

Free parking is plentiful all around the food truck.
