One of the popular places to try this iconic dish is at the three decades old Carousel Bakery inside the historic St. Lawrence Market where it all started.

Peameal bacon is lean pork loin wet cured in brine and then rolled in ground cornmeal. It used to be rolled in ground peameal, hence the name peameal bacon. It's now peameal in name only as all are rolled in cornmeal nowadays.

Peameal bacon was developed by William Davies who came to Toronto from England in 1854. He sold his peameal bacon at his stall right here at the St. Lawrence Market.

Carousel Bakery's classic peameal bacon sandwich comes with the slices of bacon wrapped between their freshly baked, lightly browned 6-inch bun - that is all. The whole thing is kept warm, wrapped in paper lined with shiny foil. This costs CDN6.45 before tax.

The thin slices of peameal bacon is slightly browned as it was lightly seared on a sizzling flat iron griddle.

I like the spongy bouncy tender texture of the moist, thin slice of bacon. It's flavour is mildly briny, salty - quite flat tasting, actually.

The bun has a stiff chewy shell with a slight crisp outside. The inside has a slight moistness soaking up some grease and juice from the peameal bacon. The plain bun itself doesn't have much flavour.

👉 The classic peameal bacon sandwich is a very simple, non fanciful dish. Just the good peameal bacon between plain buns with no garnish or sauces. Carousel's peameal bacon sandwich is as pure as it gets. Do get to know this traditional TO food icon, if you are visiting Toronto.
